My picky eater only wants French fries.
Yes, that’s right my 4 year old is obsessed with french fries. And while she fantasizes about the crispy, crunchy, golden treat she loves; I worry that she isn’t getting the nutrition she needs because she refuses to eat healthy.
As if parenting 3 children under the age of 4 wasn’t enough, now I have to contend with my super picky 4 year old who would rather stand in time out then each vegetables. At the dinner table there are tons of yuck’s, eeewww’s, and gagging when green vegetables are on the menu.
I’ve dealt with weight issues my entire life and I know that healthy eating is a necessity, but I was baffled as to how to get my kids to eat the veggies they needed.
One late night, an infomercial caught my attention. They were talking about how juicing raw fruits and vegetables was a simple, delicious, and effective way to boost your metabolism and live a healthier life. Then, I remembered. I bought a juicer years ago and it was collecting dust in my cabinet.
I pulled that bad boy out and began juicing away. As usual, my girls were crowding around the kitchen eager to see what I was up to. At the time, I didn’t think anything of it. I just knew that they’d run at the sight of this bright green yucky looking juice.
They begged and begged and begged, until finally I decided to give them a taste. In all honesty, I thought they’d hate it. But, nope.
They LOVED IT!
I was beyond excited. I had found a secret weapon to getting my daughters to eat veggies like kale, spinach, and beets.
Here’s the recipe for my all natural “Fit Kids Smoothie” that is sure to please the pickiest eaters.
1 Pound of Fresh Kale
1 Pound of Fresh Baby Spinach
Add these ingredients into your juicer, blender, or nutrabullet. Blend, Chill, and Enjoy! That’s it.
I make this recipe twice a week and my kids EAT IT UP! This mixture can even be transformed into popsicles to be enjoyed on a hot summer day.
- Blend all ingredients as noted above
- Pour into popsicle maker
- Freeze for 3 hours
As you try this recipe don’t be afraid to experiment with fruits, veggies, and flavors. Exposing your children to healthy eating and nutrition early will give them the boost they need.
Until next time, remember you’re a mom, not superwoman.
