Remember when pancakes used to be boring? Well…let me rethink that because we didn’t know that they were boring because we just ate what was in front of us. Thank goodness for creativity because now you can get pancakes any kind of way you want them. There’s sweet potato, pumpkin, strawberry, raspberry, blueberry, chocolate chip, chocolate chocolate, and today we are focusing on Red Velvet Pancakes! That’s right Creators we are turning the cake into a pancake.

Let’s start with making this mix, shall we?

1 1/2 cups of all purpose flour

3 tablespoons of sugar

2 teaspoons of baking powder

2 tablespoons of unsweetened cocoa powder

1 teaspoon of salt

2 eggs

1/4 cup of milk

1 cup of buttermilk

1 teaspoon of vanilla

1 teaspoon of distilled white vinegar

1/4 cup of melted butter

1 teaspoon of red icing color by Wilton

Are you ready to start mixing up these goodies? Well let’s turn up in the kitchen! In a big bowl mix together your flour, sugar, baking powder, cocoa powder, salt, eggs, milk, buttermilk, vanilla, vinegar, and red icing color. Mix all of this together until you see just a few little lumps like I have in the picture above. Then add your melted but until its incorporated.

Now let’s make some delicious cream cheese syrup to accompany your pancakes. Check the recipe…

4oz of softened cream cheese

1 cup of confectioners sugar

1 teaspoon of vanilla

1/4 cup of milk

In a medium sized bowl with an electric mixer add cream cheese, confectioners sugar, vanilla, milk, and mix. Once it is mixed set it aside.

Heat a griddle or a large skillet lightly greased with vegetable oil over medium heat. Dropped the batter by large spoonfuls onto the skillet. Cook until the bubbles and edges are dry. With a spatula flip the pancakes so that they can cook on the other side. Repeat with the remaining batter and serve with your cream cheese syrup.
